Lucia (Sofia, manager):Hey — quick voice note. So, this is my team: four of them, plus me. Alberto's our founder — he officially stepped back last year, but in practice he's still running the ovens every afternoon. Marta is our shop assistant on paper, but she's basically the face of the bakery — she's 24, remembers every regular's name, and runs the Instagram that brings in most of our new clients. João is our second baker — he starts at 4am, so by the time we arrive he's already exhausted but calm. His sourdough is why two restaurants signed with us last quarter. And Ana is our part-time driver — a student, three mornings a week. She's never once been late, which, if you know Lisbon traffic, is almost supernatural. As for me — first month, still learning the rhythm and the recipes. But so far, so good.
